We've not been able to find bread flour for a couple of weeks and so have been rationing it a bit, but have tons of "00" flour, so I decided to experiment last night. 50% bread flour, 40% "00", and 10% whole wheat. I dropped the water down from 780g to 760g as well, and it's come out deliciously, if a little hole-y!
