I'm now the proud owner of a 5kg bag of atta flour thanks to our local Indian grocery store, so my sourdough starter has begun! I'm very excited!

We've not been able to find bread flour for a couple of weeks and so have been rationing it a bit, but have tons of "00" flour, so I decided to experiment last night. 50% bread flour, 40% "00", and 10% whole wheat. I dropped the water down from 780g to 760g as well, and it's come out deliciously, if a little hole-y!

Overnight white bread with 10% whole wheat: massive success. I think it might be the nicest loaves I've made yet!

Oooooooops, apparently I put the second loaf into the proofing basket upside down. Or into the Dutch oven upside down, one of the two. Anyway, I have one fantastic-looking loaf and one very flat and weirdly-smooth one.
