I'm now the proud owner of a 5kg bag of atta flour thanks to our local Indian grocery store, so my sourdough starter has begun! I'm very excited!

We've not been able to find bread flour for a couple of weeks and so have been rationing it a bit, but have tons of "00" flour, so I decided to experiment last night. 50% bread flour, 40% "00", and 10% whole wheat. I dropped the water down from 780g to 760g as well, and it's come out deliciously, if a little hole-y!

Dinner tonight was an 18" New York-style pizza and it was fucking amazing. We got half sausage and half meatball. Kristina said it's the best she's had outside of New York itself!

Overnight white bread with 10% whole wheat: massive success. I think it might be the nicest loaves I've made yet!
