Oooooooops, apparently I put the second loaf into the proofing basket upside down. Or into the Dutch oven upside down, one of the two. Anyway, I have one fantastic-looking loaf and one very flat and weirdly-smooth one.

Moar bread! This is the 75% whole wheat bread, and it's unfortunately very flat. The four hours of bulk fermentation was too much, I think. I'm sure it'll still be delicious though.

Another weekend, another batch of bread! I did the overnight white bread recipe again but am slowly tuning the timings for our Australian climate. I'll be interested to see if it's as full of holes as last time, since it was only rising for about 9 hours versus the 12-14 the recipe says.

This is a before and after of the poolish, plus the resulting loaves and the sliced bread. I was expecting even more sourdoughiness from this, but instead it's a lot more like white bread-stick bread, and doesn't have the sourdough chewiness or flavour like the other recipes I've done. Still delicious, of course, but I might stick with the other recipe for my bread, at least until I get around to making ACTUAL sourdough.

Another weekend, another batch of bread. This is my most compact and well-rounded one yet, I think! Starting to get the hang of this, it's interesting how the room temperature affects the rising and proofing times.
