And now I'm finishing the day off with a take-away pizza because Kristina's out meeting people for dinner and fuck it, I've earned some trashy food today!

And then we went out for Italian! We WERE going to go for Thai and had made a booking, but Kristina got a very apologetic phone call this afternoon saying that they had to close the whole restaurant down because something had gone wrong in the kitchen and they were going to be closed for like a week because the whole floor needed to be taken up. We'd been to this Italian place before MANY years ago but had zero memory of how it was. Turns out, really good! They had a brownie tiramisu for dessert that I really wanted to try but by the time I finished the pizza I was STUFFED. And this was just the medium pizza, not even the large one.

We WERE going to go to Mamak tonight with friends but they had to bail, so instead we went to Coles and got pizza bases and made mini pizzas!

Fuck yesssss, Kristina and I are having a date night in tonight. Dinner was wings and pizza, and I brought the Xbox 360 out of storage and we're playing Guitar Hero! 🤘🏻 Unfortunately my strum bar is wonky and only registers when you're strumming _up_ rather than down, which makes it slightly awkward to play. I'm doing it with my finger finger rather than thumb so I feel like I'm playing a bass guitar.

Dinner tonight was an 18" New York-style pizza and it was fucking amazing. We got half sausage and half meatball. Kristina said it's the best she's had outside of New York itself!

We screwed up the timing on the first pizza, but the second and third were GOOOOOOD. The crust was fantastically chewy and you could fold it just like New York pizza!

Dough has been split after 2 hours of bulk fermentation! Now it sits under plastic wrap at room temperature for another six or so hours.

Today I am attempting to make proper pizza dough following a recipe in this book! It's by the same guy who wrote "Flour Water Salt Yeast", the one I've been following to make all of the amazing bread.
