Aw yissss. 😎 I followed Quorn's own recipe (https://www.quorn.com.au/recipes/chilli-con-carne-quorn-mince) but doubled it, did three stock cubes instead of two, and did more smoked paprika and less ground coriander seed (mostly because we ran out). It's SO GOOD, the sweetness of the capsicum really comes through.

A big batch of vegetable bolognese sauce simmering in a large frying pan. There's diced onion, corn, peas, beans, and carrots in it as well as the Quorn (which looks pretty much just like beef mince).

Made a huge batch of Quorn-based bolognese sauce with a bunch of veggies in it and hot damn is it good!

A photo of a big frying pan with absolutely chockers with what looks like bolognaise sauce with green beans and carrots in it, except it's actually not beef.

My department at work had another one of our quarterly "refresh days" (a free day off without having to use up a day of annual leave), so I spent part of the day putting in some seals to fix the last of the draughty doors, and another part making a huge serve of Quorn-based tomato pasta sauce to have for lunches. Tons of onion, tons of garlic. 👌🏻

I made myself a batch of Quorn-based spaghetti bolognese yesterday, had the first one for lunch today and it's excellent. I'm not sure I'd really have noticed it wasn't beef if I wasn't paying attention!
